Pazin cukerančić with Malvasia: a protected craft of preparation
Pazin cukerančić is recognised by its branched semicircle and the finishing step after baking. Once cool, each biscuit is dipped in Istrian Malvasia, coated in coarse sugar and left to dry.
The Croatian Register of Cultural Goods lists the craft of preparing the traditional Pazin cukerančić under Z-7032. The protection covers the knowledge and sequence of steps characteristic of the Pazin area, not merely the name of the finished biscuit.
The protected element is the craft of preparation
Cukerančići were made in the Pazin area for weddings and important family celebrations. The knowledge was passed on in households and is now kept alive through workshops that show the shaping and finishing stages.
The Pazin method differs from other Istrian versions in its ingredients, distinctive shape and the dipping of the baked biscuit in white wine. A dry biscuit dusted with sugar is therefore not automatically a Pazin cukerančić.
Baker’s ammonia and a branched semicircle
The dough contains eggs, sugar, flour, oil, butter, milk, vanilla sugar, salt and selected flavourings. Baker’s ammonia, or ammonium hydrogen carbonate, is used as the raising agent. It is mixed with hot but not boiling milk until it foams.
The foam is gradually added to the flour with the egg and sugar mixture. The dough rests for at least an hour, then is cut and shaped into its recognisable branched semicircle. It bakes for eight to ten minutes at 180 to 200 °C, until golden.
Malvasia and coarse sugar come after baking
The baked cukerančići are first allowed to cool completely. Only then are they dipped in white Istrian Malvasia and coated in coarse sugar. They rest for several hours until the surface has dried.
The order explains the biscuit: Malvasia is not a liquid in which the dough is baked or soaked before shaping, but the finish applied to a cooled cukerančić. The coarse sugar remains visible on its branched surface.
