Arrburoni: extra virgin olive oils from the Matia-Simon Červar family farm
Arrburoni is Sergio and Matia-Simon Červar’s range of extra virgin olive oils. It brings together Istrian bjelica, four Italian cultivars and a Premium Blend.
Five cultivars on their own labels
Frantoio, Leccino, Pendolino and Istarska bjelica carry the name of the cultivar on the label. The fifth single-varietal label is Maurinio, made from Maurino olives.
Frantoio is marked by green olive, almond and aromatic herbs. Maurinio brings artichoke, mint and rosemary alongside green olive, bitterness and pungency. That contrast explains why each cultivar has its own label.
Premium Blend as a family signature
Father and son Sergio and Matia-Simon Červar of Novigrad are behind Arrburoni. Their shared choice comes through most clearly in the Premium Blend.
The blend brings together Istrian bjelica, Leccino, Pendolino and Frantoio. They compose it anew each year, aiming for the flavour they would use in their own everyday cooking.
Awards for Bjelica and Maurino
The Červar family farm’s Istarska bjelica scored 96.38 points and won gold at the 2022 Zagreb Olive Festival. At Noćnjak 2024, Arrburoni oils made from Maurino and Istarska bjelica both won gold in the packaged olive oil category.
In March 2026, the Matia-Simon Červar family farm was among the recipients of the regional Istrian Quality mark for extra virgin olive oil.
