Oio de Buščina: olive oils from the Zubin family farm near Umag
In Buščina near Umag, the Zubin family farm produces organic extra virgin olive oils under the Oio de Buščina name. Buža, Bjelica and Črnica are bottled as single-varietal oils, while Selection blends nine cultivars. Visits to the tasting room must be arranged in advance.
Buža, Bjelica, Črnica and Selection
Enio Zubin has run the farm since 2000. Its current range consists of three single-varietal oils and Selection, a blend of Leccino, Pendolino, Frantoio, Istarska bjelica, Coratina, Picholine, Črnica, Buža and Itrana.
Tasting Buža, Bjelica and Črnica side by side is the clearest way to see what each cultivar contributes, from aroma and bitterness to pepperiness and finish. Selection then shows how the profile changes when several cultivars are brought together in one oil. Products can also be ordered from the online shop.
Organic production and the Istra PDO
Production is certified organic. The organic certificate concerns the way the olives and oil are produced, while the Istra PDO defines their origin and the rules the oil must meet. Both are subject to controls.
