The Zubin farm near Umag makes organic Oio de Bušćina olive oils. Buža, Bjelica and Črnica are single-variety oils, while Selection blends nine varieties.

Four oils, four distinct profiles

The differences between the Oio de Bušćina oils are clearest when they are tasted side by side. Three single-variety oils allow a direct comparison of Buža, Bjelica and Črnica, while Selection shows what a blend of nine varieties can bring.

• Buža has a fresh aroma, gentle bitterness and pronounced pungency.
• Bjelica brings bitterness and pungency further forward.
• Črnica combines bitterness and pungency with a slightly sweet taste and the aroma of olive fruit.
• Selection blends leccino, pendolino, frantoio, istarska bjelica, coratina, picholine, črnica, buža and itrana.

Seven consecutive scores in the Flos Olei guide

The Zubin family farm scored 97 out of 100 in the 2020 to 2023 editions of Flos Olei and 98 in each edition from 2024 to 2026. Its organic Črnica received 98 points in the 2026 guide. Its profile includes artichoke, wild chicory, lettuce, mint, rosemary and black pepper, with almond on the finish.

Tastings in Bušćina by appointment

Tasting the oils side by side makes the differences between the three varieties and the blend easier to understand than reading each profile separately. The tasting room in Bušćina near Umag accommodates up to 12 people and has free parking. Visits must be arranged in advance.
