Near Novigrad, Al Torcio makes eight single-varietal oils from its own groves. Tastings reveal their differences, but visits must be arranged in advance.
Eight varieties worth comparing
At Al Torcio, each of eight olive varieties is bottled separately. The range includes Leccino, Ascolana, Itrana, Moraiolo, Rossignola, Istarska bjelica, Pendolino and Frantoio, while the blend combines several varieties.
Each variety has a distinct aroma and flavour profile. Leccino brings fresh grass and aromatic herbs, Itrana tomato, herbs and almond, while Istarska bjelica is more assertive, with artichoke, green almond and more pronounced bitterness and pungency. A medal is one point of reference. Your own palate and the dish should decide which oil you take home.
Recent awards include gold for the organic Itrana at Berlin GOOA 2025 and a Gold Award at the 2023 NYIOOC. The 2026 Flos Olei guide scored Al Torcio 95 out of 100 and singled out its organically grown Istarska bjelica.
From four groves to oil on the day of harvest
The Beletić family tends four olive groves around Novigrad, covering 4.78 hectares with 1,854 trees. The olives are picked by hand and milled on the day of harvest.
The family opened its own mill in 2000. Since 2019, it has used a Pieralisi DMF line whose extraction process requires no added water.
Arrange the tasting before you go
Tastings for individuals and groups are available by prior arrangement. When booking, confirm which oils will be tasted, how long the visit lasts and whether there is a charge, as the format is agreed for each visit. If you want to compare several varieties, say so when you book.
Oils are sold at the mill and through the online shop. If you are travelling for a particular variety, check availability before setting out. Free parking is available beside the mill.
