From the groves near Barbariga to the mill in Vodnjan
Salvela is a brand of the Terra Eno Olea estate, which tends 12,000 olive trees across 45 hectares. Of these, 7,200 grow in Salvela's 30-hectare grove near Barbariga, on red soil close to the sea on the west coast of southern Istria. Terra Eno Olea processes the fruit within a few hours of harvest at Vodnjan Oil Mill, using a continuous two-phase system at 24 to 25 °C.
Three traditional Istrian cultivars, three distinct oils
Tasting the oils side by side explains why Salvela bottles the three cultivars separately. Buža combines fresh herbal and floral notes with the bitterness of green radicchio and artichoke, followed by moderate pungency. Istrian Bianchera is more markedly bitter, while Rosignola is more pungent, with notes of green pepper, tomato and wild radicchio. The contrast is clear even without specialist knowledge.
Aurum blends traditional Istrian cultivars in proportions that change with the harvest to keep the oil balanced. Terra Eno Olea also makes Punta Cissana, a separate limited selection of male and female Buža, Puntoža and Rosignola from a 150-year-old grove near Barbariga.
Guided tasting in Vodnjan
At the ByIstria shop and tasting room in Vodnjan, you can buy the oils and join a guided tasting. ByIstria offers two programmes lasting 60 to 90 minutes. The first pairs three Salvela oils with Istrian bites and a glass of Medea wine, while the second matches four oils with local seasonal food.

Producer score and awards for individual oils
Flos Olei scored producer Terra Eno Olea 96 out of 100 in every edition from 2020 to 2026. That score does not automatically apply to every bottle. Salvela Buža and Punta Cissana won Gold Awards at the 2026 NYIOOC, while Aurum received Silver in 2025. At the 2025 Mario Solinas Quality Award, Terra Eno Olea ranked first among the finalists in the ripe fruitiness category.
