For more than three decades, the Buršić family in Vodnjan has produced Istrian prosciutto and other dry-cured meats. A tavern and shop are part of the same estate, so the family's products can be tasted and bought on site.

Istrian prosciutto and the tavern menu

The Buršić family's Istrian prosciutto has Protected Designation of Origin status. It is dry-salted with sea salt and natural herbs and spices, then dried without smoking in the bora wind. The family also makes pancetta, ombolo, a dry-cured Istrian pork loin, sausages and špaleta, a dry-cured pork shoulder traditionally served at Easter.

The estate also produces extra virgin olive oil from Buža, Carbonaca, Leccino and Bianchera olives, available for tasting and purchase.

The tavern menu includes cured-meat platters, polenta with olive oil and prosciutto, and homemade pasta with prosciutto goulash. Other dishes include maneštra, sausages with sauerkraut, gnocchi, fuži and makaruni with žgvacet, an Istrian meat stew, and roast meat. Alongside products made by the Buršić family, the shop stocks cheeses, wines, liqueurs, truffles and olives from other Istrian producers.

Children's playground and meals for groups

The tavern accommodates groups of 15 to 150 for pre-arranged lunches, dinners and celebrations, while the open-air terrace has 70 seats. The estate also has a children's playground, farm animals and on-site parking.

Summer opening hours

From 15 June to 15 September, the tavern is open every day from 17:00 to 22:00. During the rest of the year, it opens by prior arrangement. In summer, the shop is open Monday to Saturday from 10:00 to 14:00 and from 17:00 to 22:00, and on Sundays from 17:00 to 22:00.
