Humska konoba: handmade fuži and truffles in Hum

At Humska konoba, handmade fuži come with truffles or meat ragù. The short menu draws on the cooking of the Buzet area, from maneštra and nedeva to ombolo with sauerkraut, alongside bread baked in the kitchen.

Fuži, nedeva and the cooking of the Buzet area

The kitchen makes its own fuži and serves them with meat ragù or truffles. Truffles also accompany fritaja and ombolo. Alongside these better-known dishes, maneštra made with cracked corn, sausages with sauerkraut and warm house-baked bread reveal the more everyday cooking of the Buzet area.

Nedeva has a place of its own. This old regional dish is made with stale bread, cheese, eggs and milk, shaped into a roll and cooked in broth. It explains why the menu cannot be reduced to fuži and truffles.

Ondina and Aleksandar Merlak's konoba

Ondina Merlak, née Vižintin, returned from Switzerland with experience in hospitality and decided to open a konoba in a nearly deserted Hum. A ruined house beside Polača was restored as part of the town's revival, and Humska konoba opened on 13 June 1976.

Her son Aleksandar took over in 1998. The konoba therefore remains with the family that opened it as part of Hum's renewal, rather than as a later addition for day-trippers.

Lunch at the end of the Glagolitic Alley

The Glagolitic Alley lines the route from Roč to Hum, and the konoba stands beside Polača, just outside the compact old town. In summer, booking a table is sensible, particularly for lunch after seeing the town gate and its Glagolitic inscriptions. Ask for Hum's biska with the meal, a mistletoe brandy whose recipe is associated with the local priest Josip Vidau.
