Borghetto in Bale offers four three-course menus. Emil Adum's kitchen makes bread and pasta daily, while Dragan Janko selects Istrian wines.
Four three-course menus
Valle, Borghetto, Terra and Mare are four menus, each structured in three courses. The Borghetto menu begins with Istrian prosciutto, salami and cheese, followed by pork medallions with prosciutto and porcini served with pljukanci, then the house tiramisù.
Handmade bread, pasta and Istrian wines
The kitchen makes bread and pasta by hand each day. Pljukanci in the Borghetto menu and fuži with truffles show that work in two dishes, while braised squid with polenta brings seafood to the menu. Sommelier Dragan Janko curates a short list of Istrian wines.
